amino adalah sembarang senyawa organik yang memiliki gugus fungsional (pengelompokan atom dalam molekul sehingga memunculkan karakteristik) antara karboksil (-COOH) dan amina (NH2). Dalam bentuk larutan, asam amino bersifat Amfoterik yaitu cenderung menjadi asam pada larutan basa dan menjadi basa pada larutan asam. Asam Amino memiliki peranan penting dalam tubuh makhluk hidup diantaranya sebagai Bahan Pembentuk Protein, Sebagai Kerangka Dasar Senyawa dalam Proses Metabolisme dan Sebagai Pengikat Ion dalam Reaksi Enzimatik (Kofaktor).


Asam Amino dapat dibagi menjadi dua yaitu Asam Amino Esensial adalah Asam Amino yang tidak dapat diproduksi oleh tubuh dan Asam Amino Non Esensial adalah Asam Amino yang dapat diproduksi secara langsung oleh tubuh. Jenis Asam Amino Esensial ada 10 yaitu 1.Leusin, 2.Isoleusin, 3.Lisin, 4.Metionin, 5.Fenilalanin, 6.Treonin, 7.Triptofan, 8.Valin, 9.Histidin dan 10.Arginin. Untuk Histanin dan Arginin disebut Asam Amino Setengah Esensial karena pada saat tubuh orang menjadi dewasa, ia mampu memproduksinya sendiri. Asam Amino Esensial terdapat pada telur, susu, ikan dan daging-dagingan yang banyak mengandung protein juga pad kacang-kacangan.
Asam Amino Non Esensial adalah Asam Amino yang dapat diproduksi tubuh secara langsung walaupun pada makanan juga ditemukan Asam Amino Non Esensial biasanya terdapat pada tumbuh-tumbuhan sehingga disebut protein nabati seperti pada kedelai, kacang hijau, kacang tanah dan umbi-umbian. Jenis Asam Amino Non Esensial adalah semua jenis Asam Amino yang bukan termasuk Asam Amino Esensial, contoh Asam Asparmat, Asam Glutamat, Asparagin, Glisin dll.
